Taittinger Brut La Française is a blend of Chardonnay, Pinot Noir and Pinot Meunier wines from at least 35 villages. The high proportion of Chardonnay (40%) is unique among fine nonvintage Champagnes. The presses are located in the vineyard for immediate pressing of the fruit after the manual harvest, and the resulting must is cold fermented under temperature-controlled conditions. After resting until the end of winter, the wine is blended, and then the final cuvée undergoes a second fermentation in the bottle in Taittinger’s cool cellars. The aging of Brut La Française on the lees for almost 4 years more than doubles the legal minimum of 15 months. This extra time in the cellars allows the wine to reach the peak of aromatic maturity, and the result is a delicately balanced Champagne, known for its consistently excellent quality.

This beautifully blended 2019 Cabernet Sauvignon is perfectly balanced with excellent fruit concentration. On the nose, this wine offers fresh blueberries, blackberry pie, huckleberry jam, black cherry cola, baking spices, black olives, cedar, and a touch of graphite. The palate offers smooth and velvety tannins, blackberry coulis, dried black cherries, blueberry compote, dark chocolate, toasted walnuts, croissants, and a touch of vanillin with a big finish that lingers. This offering is enjoyable today but will also evolve with cellar aging through 2035.
Far Niente Cabernet Sauvignon opens with aromas of mixed berry fruit, boysenberry, chocolate covered cherries, layered with hints of graphite and toasted oak. On the palate, a smooth entry is followed by intense, ripe berry notes. This wine is focused and silky through the midpalate, building to a finish with broad tannins and notes of cedar and toasted oak.
The 2013 Montelena Sauvignon Blanc is brilliant and pale gold in color with aromas of honey, orange blossom, warm oak, and caramelized bananas. On the palate, this wine is fresh and clean with a wonderfully juicy mouthfeel and complexity throughout. The acidity is firm but not tart. This Sauvignon Blanc is loaded with bright citrus, tropical starfruit, and a rich, slightly spicy finish with a touch of Meyer lemon custard.
Lush, energetic and intense, this gorgeous cabernet begins with aromas of blackberry, huckleberry and chocolate, as well as hints of mint, cardamom, clove and graham cracker. On the palate it displays lovely brightness, with firm, resolved tannins.
Champagne Bollinger Special Cuvee is a food-lover's Champagne since it is made in the very dry Brut style with grapes souced mainly from Grand Cru or Premier Cru estate vineyards. It consists primarily of Pinot Noir so it's quite versatile with many kinds of dishes and undergoes some barrel-fermentation, along with 3-4 years of cellar aging, twice as long as legally required. It's rich and full-bodied with notes of citrus and red berries, but also has layers of flavors including brioche and toasted hazelnuts. The Clark & Telephone Vineyard was established in 1972 and planted with "own root" Martini clone vines. Located just 13 miles from the ocean and situated on a west-facing slope, this vineyard experiences weather patterns that pull from west to east to bring cool fog and coastal breezes inland until August when Santa Ana winds begin. This climate makes for later-ripening and longer-hanging grapes with a delightful fruitiness, great acidity and underlying flavor nuances that contribute additional complexity. Due to intensive pruning and crop-thinning, the vines produce loose clusters with small, intensely flavored berries. The result is dense, dark-berry fruit and abundant, sweet, baking-spice characteristics that are synonymous with the Martini clone.
