A proportion of the spirit is matured in a selection of French Oak casks for a limited period, so as not to overpower the final result; increasing the intensity, resulting in a richer and creamier finish.
This is a wonderfully rich and complex single malt. Opening with rich and spicy aromas of crème brulee, heather honey and crumbled cinnamon, intensely fruity notes follow - fresh pineapple dressed with a scattering of sun-kissed lemon zest. There's a hint of freshly-baked sponge cake too, warm from the oven, and you'll find cinnamon again, but toasted shards this time. Citrus and vanilla notes linger in the aromatic waves of peat smoke.
A perfect combination of age and proof. The 12 years of aging and medium proof of 90.4 seem to be just right in creating a very pleasant drink of whiskey. This fine bourbon can compete with any excellent cognac as an after-dinner drink.
